I pan fried some fresh tuna steaks for dinner this evening and in the absence of any other ideas I made up a sauce which I was quite pleased with After pan frying the tuna steaks I deglazed the pan with a splash of white wine. I let this reduce a bit then stirred in a generous couple of teaspoons of pesto and a big dollop of creme fraishe. I let this warm through then just stirred in some chopped spring onion tops Spooned this over the tuna and served with shredded cabbabe, broad beans and minted new spuds (fresh from the potager). Yum
