Here is a recipe from BBC Good Food's "101 Simple Suppers" (an absolutely brilliant little book which I would recommend to anyone).
"Ham Stuffed Marrow - Serves 4 - takes 25 minutes It can also be used for some squashes too
Ingredients:
1 Marrow (about 1.5kg/3lb 5oz in weight) 25g/1oz butter, cut into cubes 6tbsp ready-made tomato pasta sauce about 10 slices water-thin ham 4 eggs 85g/3oz Double Gloucester or Cheddar cheese grated
Pre-heat oven to 190C/Gas 5 (fan oven 170C). Peel and halve the marrow (lengthways) and scoop out the seeds. Put in a shallow microwave-proof dish, dot with buter and season. Cover with cling film, pierce several times and cook on High for 7 minutes, until tender. Spoon the tomato sauce into each marrow half. Arrange the ham on top. Break two eggs into each half and sprinkle with cheese. Bake for 12-15 minutes, until the effs are softly set and the cheese has melted and turned golden.

That sounds delicious and very timely too - we have come back to 2 courgettes that have turned into marrows and I was wondering what to do with them!
