If anyone finds Crab Apples here's the receipe for jelly:
Wash the apples then remove the stalks and put them in a large pan. Just about cover them with water and bring them to the boil, then simmer for about 25 minutes until they are soft.
Allow the fruit to cool then pour into a jelly bag and allow to strain for 24 hours.
Measure how much liquid you have, then for every 10 parts of liquid add 7 parts of unbleached sugar and the juice of a lemon. Bring to the boil to dissolve the sugar and keep at a "rolling boil" (which means more than simmering but not boiling over!) for 35-40 minutes, skimming off the froth regularly.
To test, chill a plate in the fridge. When the jelly is set, it will solidify on the plate. Pour into warm, sterilised preserving jars and tightly seal while still slightly warm. Store in a cool dark place (light can cause the jelly to fade and lose flavour).

Love Crab Apple Jelly. Years ago an elderly lady in the next village use to make it and send me some, great with runner beans
