Has anyone any experience with this spice - I think it is from Morocco (?) and I was told to add it to CousCous.
I have yet to find it, but if I do - what exactly does it taste like?

This is how to make it: - RAS EL HANNOUT Ras el hannout translates as "head of the shop" because it has the best spices in it. It is a popular mixture throughout North Africa. This Moroccan version is from Ana Sortun's "Spice: Flavors of the Eastern Mediterranean" (HarperCollins, 2006). She notes that this spice mixture is especially good with chickpeas, squid, fish and many vegetables, but "it really shines with chicken." ¼ cup cumin seeds 3/4 teaspoon saffron 1½ teaspoons ground cinnamon 1 tablespoon turmeric 1 teaspoon ground ginger 1 tablespoon freshly ground black pepper ½ cup paprika In a small skillet over medium heat, toast the cumin seeds for 2 minutes until fragrant. Place in a spice grinder and cool completely. Add the saffron and grind with the cumin seeds. Remove to a mixing bowl and combine with the other spices. OH loves Moroccan as there was a fantastic restaurant just down the road from the house in Arcachon. I try and make him some now and then. (Well, Moroccanish lamb and Cous cous ) Perhaps the ingredients will give you a flavour ('scuse the pun) of what it may taste like.

Thanks Amo - yes I can guess the flavour from the ingredients. Something tells me that my OH wouldn't be too happy but then I am game to try most things - within reason. Should I not be able to get it, I can certainly try mixing it together.
Spruance - thanks for the Ebay link - I am ashamed to say that I have never bought anything from Ebay and I have no idea what to do. I had thought of looking in Oldenburg when I next go - there is a rather good Turkish shop that I enjoy going to - perhaps they have it there.

I've just had a rummage in the two cardboard boxes my spices are in, (which was fun because they are in the spare room as I have no kitchen as such at the moment ) and I have some Dukkah from Sainsbury's which is toasted chick peas ground with spices, I know you probablly don't have Sainsbury's RF but... And I also have a Moroccan spice blend mix made by Schwartz in the Cook Art range which is so lovely. Link here www.schwartz.co.uk/ Do you have Schwartz?

Schwartz - nope, nor do we have Sainsbury's of course. I normally stock up with Schwartz stuff when I am in the UK. I do have a specially hand-made wooden spice rack for my Schwartz herbs and spices - I just keep filling them up from here or the UK when I am there.
I must admit that there are some that are so old that they are more for decoration really...

We use Moroccan Spice all the time - so much in fact, that we buy it by the jar from a wholesaler (500G) - we love it cooked with lamb chops etc!
