125g butter 300g of dark chocolate - minimum 70% cocoa solids, broken into pieces 3 x 15ml tablespoons golden syrup 200g Rich Tea biscuits 10g mini marshmallows 2 teaspoons of icing sugar for dusting Melt butter, chocolate and golden syrup in pan. Pour about 125ml of this melted mixture into another small pan and keep warm to one side. Put biscuits in freezer bag and bash with a rolling pin. You want to end up with crumbs and biscuit pieces. Mix the biscuit peices into the melted mixture and then add the marshmallows. Tip into a foil tray (24cm square) and flatten as best as you can. Pour the reserved 125ml of melted mixture over the top of the marshmallow mixture. Refrigerate for 2 hours...or overnight. Cut into 24 fingers and dust with icing sugar by pushing it through a tea strainer. (If you cut it correctly all the calories should fall out! ) I didn't have a 24cm square foil dish so I used a same sized baking tray lined with baking paper. It tipped out easily.
