Get a fresh pineapple, top and tail it and remove the outer skin.
Then cut into 1" square lengths so they will thread onto a skewer
Cover the pineapple with sugar
Cook on the barbie until the sugar has caramalised.
meanwhile, melt some chocolate in a "bain marie" and add a little malibu or other exotic flavour of your choice.
use as a dipping sauce for the pineapple
That's exactly what we're doing tonight !!!!! ;D

Forgot to ask Andy.....did you use white or brown sugar? Would it make a difference do you think?

Forgot to ask Andy.....did you use white or brown sugar? Would it make a difference do you think? I used caster sugar as that's all i had but if i had a choice,it would probably be one of the soft brown sugars...maybe light brown.
