Courgettes au gratin6-8 courgettes
Salt & pepper
2oz (50gm) butter
4 lean bacon rashers cut into half inch strips
1 onion, finely chopped
4 tomatoes
1 teaspoon fresh chopped tarragon (optional)
4 tablespoons breadcrumbs
Parmesan cheese for topping
Preheat the oven to 190C / 375F / Gas Mark 5
Wash courgettes and trim of both ends. Put in a pan of boiling, lightly salted water and cook for 5 minutes. Drain. Once cool enough to handle slice them in half and scoop out most of the flesh using a teaspoon into a bowl. Butter an ovenproof dish and put the courgette shells skin side down into the dish.
Melt half the butter in a pan and fry the bacon strips until they start to crisp, then add the onion and continue cooking until the onion softens.
Skin the tomatoes, cut them into quarters and remove the seeds. Chop the pulp into small pieces and together with the courgette flesh add to the bacon and onions. Add the chopped tarragon and continue cooking until all the ingredients are well blended. Season to taste with salt & pepper and then spoon the mixture into the courgette shells.
Melt the remaining butter and fry the breadcrumbs until they are brown and crisp. Spread them over the courgettes and sprinkle finely grated parmesan over the top. Bake in the oven for approximately 20 minutes until the top is crisp. Serve with a cheese sauce.
Variation …
The round courgettes can be used for this dish, the ingredients are almost the same, but use 1oz butter to fry the bacon & onion, half an ounce of butter to fry 2 tablespoons of breadcrumbs which are then mixed with 3 oz of strong cheddar cheese and roasted as above.
Spanish style pork with courgettesPreheat oven to 160C / 325F / Gas 3
4 lean pork steaks
Salt, pepper and paprika
1 onion, finely chopped
2 tablespoons cooking oil
12 oz (375g) tomatoes
12 oz (375g) courgettes
1 tablespoon tomato puree
1 teaspoon sugar
5 fl oz (150ml) chicken stock
1 oz (25g) butter
Chopped chives to garnish
Season the pork steaks with salt, pepper and paprika to taste. Heat the oil in a frying pan and brown the steaks on both sides, about 2 minutes per side. Remove from the oil and place in a lightly buttered ovenproof dish. Fry the onion in the oil until golden then spoon over the steaks. Skin and roughly chop the tomatoes and layer them on top of the onion. Wash the courgettes, trim off both ends, then finely slice them and arrange them over the tomatoes. Mix the tomato puree with the sugar and blend it into the chicken stock. Pour of the pork and vegetables until it comes just below the courgettes. Cover the dish with a lid, or baking foil and place in the centre of the oven for 50 minutes. Remove lid, brush the courgettes with melted butter, or if preferred finely grated cheese, and return to the top of the oven for 15 minutes or until the courgettes have started to brown. Garnish with chopped chives.
