Does anyone have a recipe for Banoffee Pie? I have looked on-line and in recipe books but they are all conflicting...some add chocolate some add nutmeg. Some use whipping cream some use double cream.. I don't know which is the best one... All I want is a foolproof recipe that someone has tried before. Thanks..... Missy x

www.videojug.com/film/how-to-make-banoffee-pieI found this; looks easy when you watch the vid and it appears chokky is necessary - lots of it ;D BUT Missy I dont think I would be very happy leaving a can cooking in hot water for 2 hours - someone posted a comment to say hers exploded Am sure there is another way

I've never made it but a friend of mine has and had to boil a can of condensed milk for 2 hours and it exploded round her kitchen - it was very messy

Or try this method .. Put 150g of digestive biscuits in a clean plastic bag and crush with a rolling pin. Melt 75g butter in a small pan, add the biscuits, mix, and press into the base of a 20cm flan tin. Chill in the fridge for 30 minutes. Put 100g of soft dark brown sugar and 100g of butter into a non stick pan, melt these 2 together then add a 400g condensed milk and bring to the boil whilst stirring. When thickened pour over the base and refrigerate until set. Peel and thinly slice 3 large bananas, and arrange in a layer over the toffee. Finally, whip a 284ml carton of double cream until thick and spread over the bananas. Decorate with a dusting of cocoa powder and some grated dark chocolate, if you like. x Tig

You can cheat and buy a tin of Nestle caramel Lovely it is too and sooo very quick and easy.

I've made one today, as the Grandkids are here for the last Thursday of their summer hols tomorrow The 'caramel' is setting in the fridge with the nanas on top. Hope by the morning it will be 'solid' and I can whip the cream and sprinkle the cocoa before I pick them up ;D If they don't scoff it I'll try and get a photo ... x Tig

I do a slightly different one.....
I crush up a packet of chocolate hobnobs or digestives then mix well with a a good few nobs of soft butter or "spread" There's no melting or setting involved with this but it does get your hands messy ;D Press this into a dish.
Boil the 2 tins of condensed milk for 2 hours....or buy the pre made stuff in Tescos and spread over the base.
Cover the "toffee" in sliced bananas
Add whipped cream on top of the bananas
crush up a flake and sprinkle over the cream

yer...boil in the tins.....tins unopened. Just put the closed tins in a pot of boiling water and leave. Make sure you top up with water every 15 mins or so

Missy make sure you 'simmer' the mix until it thickens, I got impatient and it didn't set properly It tasted fine though, and the Grandkids asked for seconds x Tig
