I follow the recipe on the side of the preserving sugar packet MRH. I've only made strawberry jam recently but the recipe worked well.

I've had a go at making various jams this year, some more successful than others I was worried the damson cheese I made wasn't going to set - three months on it has solidified to a very firm (rubber-like) jelly in the jar Good luck Missy x Tig

Hello MRH I followed the recipe on the pkt of sugar for strawberry jam and it worked very well With plums you have to make sure they are cooked a bit before you add the sugar to soften the skins.Plum jam should be fine for setting - give it a go - you will be so pleased when you taste the jam Much much nicer than bought Not sure about pineapples though - I think it would be hard to get a 'set'.Pineapples have an enzyme that prevents a jelly from setting so I am wondering if the same would apply to jam You might have to mix it with another fruit -not sure though - sorry

Well, that was quick - I haven't got any.
But how about this recipe from Delia's forum...
PLUM JAM
1kg red plums, chopped 1kg sugar Cover plums with sugar and leave overnight. Bring to boil, stirring until sugar dissolves. Boil rapidly to setting point. Pack, cover, cool & seal.

Could eat the rhubarb but can't eat anything with orange in it. I love fresh oranges but not anything that is flavoured by them...strange one aren't I? I didn't realise how much stirring was involved in making jam..my arm aches now Might try one with softer fruit next time.
