I make a very simple one LG 4oz each of butter, sugar and self-raising flour, 2 medium sized eggs Cream butter and sugar until pale and smooth, add beaten eggs a bit at a time. Then fold in the sieved flour until the mixture drops off the spatula. If it seems a bit thick add some milk. Divide into sandwich tins and bake on middle shelf of oven at Gas 4 (sorry don't know electric equivalent) for about 20 - 25 mins (you know when its done Allow to cool and spread one half with jam and I usually make buttercream for the other, then slap em together and dust with icing sugar (if you can be bothered) If you want a bigger one use 6oz of everything and 3 eggs x Tig

The internet is a wonderful thing, I typed in what is gas mark 4 in Celcius and it came back with the answer, 176 c ;D

I make it the same way...equal amounts of fat, sugar and flour. and I bake on 175C in a fan assisted oven......

I like all Cake Post a piccy Lady when you has baked it - I dont think could be bothered with the fillings - ;D making them that is not eating them

Have you got a food processor LG - I plonk the butter icing ingredients in mine and it is made in a few seconds.

I have a Marco Pierrre White mixer which is great. I will see if I can get time to make one over the next day or 2. I had intended making it before Jenny arrived yesterday evening but another friend called to visit and I did'nt get a chance.

Just made a Victoria Sandwich sponge à la Tig.....got visitors coming this morning and they love anything English.. Thanks for a wonderful easy recipe Tig....I only do "wonderfully easy" baking..preferably with step by step instructions !! RF

Haha - yes I did - it's homemade strawberry jam....OH has just said that if I do this every time we get visits he will start asking people every day !!

Our guest finished off two pieces - think he enjoyed it!!
I took a quarter to our neighbour that has just come out of hospital and we have got a quarter left...don't last long, do they !!!
