I bought some lemons yesterday in Lidl..49p for 4.....might have to make a cake too...but I fancy a lemon meringue pie so might use some of them for the lemon curd. what I really want to make is a chocolate meringue with a fresh cream filling...but no one but me will eat it ecrx

I made a rhubarb cake yesterday, as I was given some rhubarb.
I adapted an apple cake recipe and it worked well.
4 oz SR flour 4 oz castor sugar 4 oz margarine 2 eggs plus a little milk. I used about half a pound of the rhubarb a sprinkle of brown sugar.
Grease a small cake tin (mine was a 6" one)
Whizz up the marg and sugar, add beaten eggs plus milk (if needed to soften the mixture more). Place in cake tin, put pieces of rhubarb on the top and sprinkle with brown sugar.
Bake at 150 degrees for 45 minutes.
I think next time I might stir in the rhubarb, not just leave it on top.

I am following recipes from the Hairy Biker diet books - only breakfasts so far, but they are much more interesting than boring old porridge. I made 12 banana pancakes yesterday afternoon and I'm having 3 this morning with some fruit. 271 calories per portion. I hope they're OK after a night in the fridge!

The rhubarb cake sounds yummy and the carrot and fruit cake Geranium and Barbara , I love all moist types of cake, not sure I fancy the banana pancakes though. Missredhead did you make the quiche, always has to have bacon and onion in it for me plus anything else thats going

Yes Chuckles I did..it was bacon, spring onion and cheese with sliced tomato on top to decorate it..it was delicious

Just done my first poached egg in the Microwave...well was a mess that one. First one wasn't tooo bad I suppose - yoke was hard (yuk) and the second one exploded - what a bugga - the mess....think I need to try again....nay the old method always worked !!!
