Give this one a whirl!
Ingredients
1¼ oz Cocoa powder 4¼ oz Plain flour 1½ tsp Baking powder 1 Pinch salt 5¼ oz Caster sugar 8½ floz Corn oil 1½ tsp Vanilla essence 3 eggs beaten 1 pack or (9oz) cooked beetroot, pureed 4oz Plain dark choc (60% +), broken into small pieces
Method
Preheat the oven to 375F/190C/Gas 5 and grease an (7") round cake tin. Sift the cocoa, flour, baking powder and salt into a bowl and mix with the sugar. Add the oil, vanilla essence, eggs, beetroot and chocolate pieces and mix well. Pour into the cake tin, put on a baking tray and bake for 50 minutes, or until a skewer comes out clean.
This is a lovely moist cake and is doesn't taste of beetroot...promise.

Hi David, Well, why not? We do eat Carrot Cake after all . A friend at work who likes to watch her calories, has a coaster bearing the slogan 'Carrot Cake counts as an extra portion of vegetables'! ;D Beetroot cake must be the same! ;D Spruance

As you quite rightly say, no taste of carrot in carrot cake (one of my favourites)
There is a high sugar content in beetroot making it ideal in this case.

Awww! Margi, I'm sure you would like it!
The beetroot is pureed and I promise you can no more taste it than carrot in carrot cake or cheese in cheese cake.

But I LIKE carrots and I LOVE cheese, and next to those two beetroot doesn't quite cut the custard! As I believe I said before, YEUCH!!!

PS - Using it would kind of presuppose I was going to let the stuff within 10 yards of the boundaries of my property! Seems unlikely...

Hi DK, should have been at the plot today but I have been baking instead. The cake has turned out well, I made it in a square tin and it is sandwiched together with 1/2 a pint of whipped double cream and dusted with coco powder. Had a sneaky taste - lovely Made a lot of mess with the beetroot though

Hi jlottie! Well done! I like your variation. I should have made clear just how rich it is and cream compliments it so well. Please reassure Margi and others that there is no taste of beetroot.

ROTFL, David! Sorry - I don't eat anything that's had a face! The only way I'd eat that would be if the surprise was that it had neither monkfish nor prawns in it (though I'm sure it's absolutely wonderful)!!! I'm sure you'd rustle up something marvellous with mushrooms? Don't worry - I'll give you chance to work something out before I come round for my tea!
BTW, I suppose if the beetroot wasn't within 10 yards of the boundaries of my property I wouldn't really have a leg to stand on...

PML! But monkfish are so ugly, they should be deaded. Quite a challenge to create a meal around a mushroom (even for a fungi like me). How's about a mushroom n lentil salad??? <steam smiley>

I made this cake last night after having a disaster with Plan A - courgette and apricot cake - which collapsed in a mess when I turned it on to the cooling rack. The birds are now feasting on it.
Anyway, Plan B was quick and easy to prepare and tasted delicious and the Belgians have no idea it had beetroot in it. Might tell them next time but not before Possum has finished off the rest. She thinks she doesn't like beetroot.
I used to make chocolate carrot cake to get her to eat carrots and she likes those without chocolate now.

Glad it turned out well for you. I'm sure you would agree it's rather rich and more appropriately used as a sweet (pudding) rather than a cake.

Hi Mr K - you're obviously not accustomed to regular rations of Belgian chocolate and haven't tasted my chocolate carrot cake which is a form of "death by chocolate". This beetroot one is definitely just right and not too rich at all.

Obelix As you will understand, there were no patriotism issues for me to grapple with, but I can report that I use Belgian dark chocolate. [70% cocoa and freely available in the UK] I'm afraid I do find it very rich, particularly those chocolate hot-spots inside. Yours Chocolate wimp!
